making of cinnamon buns

i love the unique fragrance of cinnamon, and I really miss the sweet taste of cinnamon buns i used to had in canada, cinnabon was my fav! anyway, i've been wanting to make them for long, i tried to look up for the perfect recipe online, but haven't been sure which one is best until i found this one. I followed the instruction exactly as written, and i was so glad that the rolls turned out heavenly!

ingredients:

3/4 warm milk
2 1/4 tsp instant yeast
3 egg, room temperature
4 1/4 cup all-purpose flour
1/2 cup cornstarch
1/2 cup granulated sugar
1 1/2 tsp salt
12 tbs unsalted butter, softened

filling:
1 cup light brown sugar
1 1/2 tbs ground cinnamon
1/4 tsp salt
4 tbs unsalted butter, softened

frosting:
2 oz cream cheese
1/8 cup butter
1/4 tsp vanilla extract
1/2 cup of confectioner's sugar
1 tbs milk

to make the frosting, just mix all the ingredients together until smooth.

1. heat oven to 100C, when the oven reach 100C, turn off the oven.
2. whisk yeast and milk a cup until yeast dissolved, then whisk in egg
3. in the bowl of stand mixer, mix the flour, cornstarch, sugar and salt together until combined.
4. with the mixer on low speed, add in the warm milk mixture, mix until the dough comes together, about 1 min.
5. increase the speed to medium and add in the butter one piece at a time until incorporated. continue to mix for 10 mins until the dough is smooth.
6. turn the dough out and put onto a floured surface and knead to form a smooth round ball.
7. transfer the dough to a prepared bowl, cover with plastic wrap. let the dough rise in the warm oven for 2 hours.

8. let the dough rise until doubled in size
9. while waiting, combine brown sugar, cinnamon and salt in the bowl.

10. put the dough on a floured surface and roll out into a 18 inch x 18 inch square

11. spread with butter

12. sprinkle evenly with cinnamon sugar

13. starting with the edge nearest, roll dough into a tight cylinder


14. cut roll into 8 even rolls

15. transfer rolls, cut-side up, to baking pan. cover with plastic wrap and let rise in a warm place until the dough doubled in size.
16. after rolls are done rising, turn the oven to 180C. discard plastic wrap and bake the rolls for 35-40 mins.
17. while baking mix the frosting ingredients.

18. when the rolls are done baking, transfer to a wire rack and let cool for 30 mins

19. frost the rolls and it's done!

my first attempt making cinnamon rolls from scratch was a success! it took me the longest baking time even, i don't want to brag but be honest the result was really fantastic! the taste reminds me of my happy childhood life in canada! i'm already thinking to add crushed almond to the glaze next time.
