herb marinated rack of lamb

papa and I both have a crave for lamb, this is a great recipe for home cooking because it seems so advanced when in actually it's very simple.....

recipe: 1 lamb rack, 1/2 cup extra-virgin olive oil, plus 2 tablespoons, 4 crushed garlic gloves, 2 crushed rosemary sprigs, 6 thyme sprigs, ground black pepper, sea salt.
mix together the olive oil, crushed garlic, crushed rosemary and thyme sprigs in a large bowl. add the lamb and coat well. grind some black pepper over all. wrap well and marinate for a few hours.
preheat the oven 200C. heat a large pan over medium-high heat and add the olive oil, season the lamb with salt, sear fat side down until golden, turn over so that the fat side is up and roast in preheated oven for 20 mins. let the rack rest for 10 mins before cutting.

aiden loves this homemade mushroom soup~
recipe: 1 onion, 480g mushrooms (sliced), 2 cups of water, 1 cup of chicken stock, 325ml of cream, butter and salt.
heat 1 tbsp of butter in a pan, use low heat to stir fry the chopped onion until soft. add mushrooms, stir fry briefly, then add water and chicken stock, boil for 15 mins, season with salt. when it's cool enough to handle, blend the soup till smooth, reheat the soup and stir in cream, serve with olive oil on top.

cut each lamb rack into 1 bone per chop and serve with mashed potato and asparagus.
my maid found aiden was holding his little guitar sitting next to the piano when i was preparing dinner.....what a great entertainer den den.....mama wishes to see you playing a real guitar one day.........
