chocolate hazelnut corn flake cookies

this is a must-try cookie recipe, it is so good that i can't help to share on my blog. these cookies are made with "not-too-much" butter, low sugar amount, corn flake, hazelnuts and chocolate chips. what a good balance of healthy and not-so-healthy ingredients ;) it makes me feel that it is not a sinful thing to pop one cookie after another into my mouth.

ingredients:

30g corn flake
15g hazelnuts
15g chocolate chips
55g unsalted butter
45g brown sugar
35g egg
80 sifted flour
1/4tsp baking powder
in a large bowl, mixed the corn flake, hazelnuts and chocolate chips. set aside.
in another bowl, use an electric mixer to mix the brown sugar with the unsalted butter.
add in the egg little by little and turn the mixer on a high speed.
blend in the sifted flour and baking powder in two additions with a spetula. then add in the corn flake, nuts and chocolate.
drop tablespoonfuls of the cookie dough onto the baking tray. flatten each cookie dough slightly with the back of a fork, keeping the shape as even as possible. bake for 25mins at 170C or until golden.

scone craving

the best scones in town has be the raisin scones from mandarin oriental, served with the rose petal jam and clotted cream, the scones are always warm, soft and buttery. i've been wanting to make home-made scones for a while, and tonight i decided to give it a try. i followed the recipe from joy of baking, with the video demonstration, it's pretty simple and only few ingredients are required. check it out if you want to try!





ended up with a round scone, not quite like the one from mandarin, but they were still as delicious, it was very satisfying to see the scones coming out from the oven!

happy birthday vanessa

last sunday aiden was invited to his classmate vanessa's 3rd year old birthday party. aiden is just attending pre-nursary but almost every month he has birthday party invitation from his classmates or friends. i guess kids today are different from my generation...when I was young, i never dream of getting a birthday party. a birthday party? that is out of question for us!! well, I guess to organize a birthday party for children was not a trend...all I can say is today kids are so lucky!! anyway, aiden was so excited because the theme of the party was sponge bob! everything from plates, cups, balloons to goodies bag and decoration was sponge bob! i guess vanessa must be a big fan of sponge bob. we spent almost half a day at the party, it was a fun and enjoyable party. happy birthday to lovely vanessa again, wish you always stay pretty and healthy.

happy father's day

i made my dad a traditional steam sponge cake yesterday, i grew up eating this cake, and it is the only kind of cake my father likes because it is light, healthy yet delicious. my dad is a super healthy man who never drink nor smoke, he wouldn't eat anything that is fat, he always reminds us the importance of healthy life. anyway, for father's day, i think there's nothing better than giving him his favorite childhood cake that is healthy and homemade. here's a recipe to share, very simple and straight forward:

ingredients:

6 eggs (yorks and whites seperated)
1 cup caster sugar
1 cup flour
thanks aiden for helping to sift the flour

beat the egg yolks and sugar with an electric mixer on high speed

blend in the flour bit by bit into the egg yolks. mix well on low speed.

beat the egg whites with the mixer on high speed until they form stiff peaks.

put the flour-egg mixture into the beaten egg whites. mix gently by spetula


pour the batter into a the cake pan and steam over high heat for about 30 mins.

the cake turned out to be really soft, moist and not too sweet. i knew my dad would love~

we visited this place with our friends after reading judy's blog. it's a rather compact bar restaurant with only about 15 seats hidden in LKF. welcoming us was a choice of cocktail for free for ladies, i ordered the lychee sour which was quite chill out!



complimentary antipasti
hasu-imo green salad with tosa vinegar dressing, was very special and refreshing.
delicious potato balls with a thick tobiko sauce
seared foie gras and dashi fish stock came in a bowl

yu-Ichi beef, a kind of waygu, skewers was very delicious.
ground chicken skewer was crisp and delicious, it came with a hot spring egg.
beautiful red washi paper lamps
the egg omlette was very soft
i like the lamb rack cut into small pieces, it's very tender and juicy
my friend michelle ordered this soba, again served with the hot spring egg, looked impressive

i had the udon, was chewy al dente, served with tempura dried shrimp, quite tasty. the soup was peppery and rather hot.
