small jewels from paris


big thanks to eliz for the delicious macaroons from laduree, paris
instantly, i popped one of these in my mouth,
it was as if i was chewing on a cloud....

the classic parisian sweet is made with very finely ground almonds,
the cookies are smooth and domed on top, soft and chewy inside,
it's a recipe that's not about a recipe, it's about a technique.
from my experience, they're easy to make but just too difficult to perfect.
