crunchy almond cookies

will be going to macau this weekend for my grandpa's 88th birthday, i decided to give him a little surprise by making him some home-made cookies! grandpa is a big kid, he loves traveling in the past, but his legs are not very good in recent years so he couldn't travel anymore. so whenever we have the chance, we go to macau to visit him. he loves basically everything i make him, i can imagine him smiling like santa claus when he eats the cookies! can't wait to see him!!!

ingredients:

100g butter
50g icing sugar
1/4 tsp salt
1/4 tsp vanilla extract
30g egg
150g flour
25g milk powder
1/4 tsp baking powder
15g egg white
35pcs. whole almonds
cut butter into small pieces, then add sugar and salt and blend well with an electric mixer. add vanilla extract then blend in the egg by 2 additions.
sift flour, milk powder and baking powder into the mixture, blend well with a spatula.
wrap the dough with plastic wrap and put it in the freezer for 1/2 hour.
take 10g from the dough for each cookie ball, then put it on the baking tray one by one, brush the egg white on top of each cookie.
put the almond on top of each cookie, press down the almond with finger tip to make the cookie a bit flat. bake in the oven for 25 mins.

these cookies are surprisingly crunchy!
