last night, we baked a batch of chocolate coated butter cookies using a recipe from a taiwanese baking book i recently purchased. it was my first time making these cookies, the dough was made by the creaming method, that was, creaming butter with icing sugar to give a soft and crumbly texture. icing sugar was used instead of caster sugar to prevent the cookies from spreading. corn flour was also used alongside plain flour to give the tender, melt-in-your-mouth texture. it's really a great recipe to follow, easy and cookies can be done in just 35mins!
ingredients:
50g unsalted butter
50g icing sugar
1/2 tsp vanilla extract
25g egg white
60g flour
1/4 tsp baking powder
20g corn starch
dipping
50g chocolate
use an electric mixer, cream butter and icing sugar together, then beat in the egg white. continue to beat until the mixture becomes pale and fluffy. add the vanilla extra and beat for a few seconds.
sift in the flour, corn starch and baking powder together over the butter mixture and mix until smooth.
pipe into the desired shapes on a baking tray lined with parchment paper. bake the cookies in preheated oven at 170C for 20 minutes. when it's done, leave for a few minutes in the oven to firm up slightly before transferring to wire rack
lastly, melt the chocolate and dip the two ends of the each cookie, one by one, leave them to dry on the wire rack
these butter cookies are a great treat for kids! I like the simple flavor...butter and vanilla, yummy!
