focaccia

in more recent years, i have became a great fan of focaccia, i really like this bread with dipping olive oil and vinegar, so good, isn't it? this recipe is surprisingly easy. although i hate to wait for 3 hours for my bread to be done, I still enjoy kneading with the dough and making bread for the my family to enjoy!


ingredients:

300g bread flour
10g caster sugar
1/2 tsp salt
4g instant yeast
170g warm water
10g olive oil

topping:

1 tbsp olive oil
5-6pcs garlic (sliced)
2 tbsp mixed herbs
salt
pepper


in a small bowl, mix the water and yeast.
in the mixing bowl, mix together the flour, sugar, salt on low speed until the flour is incorporated. add in the yeast water, turn the speed to medium, add in the olive oil and knead until the dough is smooth and soft.


roll the dough into a round ball, cover with plastic wrap and let rise in a warm place for 1 hour.
gently deflate the dough, recover and let rise for 10 mins. at the end of this time, the dough should have rise to double its original size.

place the dough onto the baking sheet, roll the dough into a round circle, brush top with olive oil, sprinkle with garlic, herbs, salt and pepper. let the dough rise for 20mins before putting it into the oven.
bake the focaccia in the preheated oven (180C) for 25 mins.


this recipe calls for proofing the dough by three times, making the center very puffy! the slightly crisp crust of the freshly baked focaccia has also excited me!
