peanut butter chocolate drop cookie

after the wonderful short trip, finally i could manage to squeeze in some time to play with flour again. drop cookies are mainly made by the creaming method...where you beat butter and sugar until the mixture turns fluffy, eggs are then added in followed by flour and any other flavourings such as chocolate chips or nuts. It's pretty easy and straight forward.

ingredients:
50g unsalted butter
40g caster sugar
50g peanut butter
25g egg white
80g cake flour
1/4tsp baking soda
40g chocolate chips

Preheat oven to 170°C
Beat butter and sugar in large bowl until creamy. Add in egg white and peanut butter; beat well.
Sift together flour and baking soda then gradually add to the butter mixture, blend in well. Stir in chocolate chips.

Drop by teaspoons onto the cookie sheet and bake for about 20 minutes, do not over bake.
Cool slightly and remove from cookie sheet to wire rack

it's amazing how good quality ingredients can make such a great difference!! couldn't wait to bake another batch soon!
