chocolate truffle torte

this recipe is quite simply the best chocolate dessert I have tasted in years and the easiest to make. chocolate torte is rich and chocolately cake with an almost pudding-like texture, containing little or no flour. it's originated from europe and has become very popular in N. America. I like its broken and cracked surface and sunken top, with softly whipped cream or vanilla ice-cream, it's so yummy!

Ingredients:

140g dark chocolate
100g unsalted butter
3 egg yolks
20g caster sugar
30g flour
15g cocoa powder

3 egg whites
50g caster sugar

Preheat oven to 170C.
melt the dark chocolate and butter in a bowl over boiling water, remove from heat and let cool.
whisk egg yolks with caster sugar until the mixture becomes creamy. put in the melted chocolate butter. whisk until well mixed. then add in flour and fold with a spatula.
beat egg whites with an electric mixer on low speed until mixture becomes foamy. add half of the 50g sugar and beat the mixture at high speed. continue to add in the remaining sugar and beat until the egg whites becomes firm.
add the egg white to the mixture in two additions. pour batter into the cake pan. tap the pan slightly on the tabletop for a few times. bake at 170C for 35 mins
remove cake from oven and let it set in the pan for about 5mins.
dust the surface with sifted icing sugar
