present to the amazing mom

mother's day is coming up and i thought i could give my mom a present and bake her a cake to honor her. my mother is an amazing woman to me, she shares her wisdom with us and she loves us unconditionally. she really deserves nothing but the best because she's such an wonderful wife, mother and friend everything!!! anyway, it's been a long time since i last made angel cake, hope that she will like. below is the recipe to share:


ingredients:


egg 220g

caster sugar 80g

plain flour (sifted) 80g

unsalted butter 40g


preheat the oven to 180C, then whisk the egg and caster sugar over double boiler. let it warm and then whisk the egg and caster sugar until peak. blend in the sifted flour into the egg mixture by 3 times, do not over mix. after this, mix the melted butter with a little left-over of egg and pour back to the egg mixture. fold up well until the surface becomes shiny. bake for 15 mins, then bake for another 12- 15 mins with only top heat on. cut into 3 layers.




for the honey comb:

water 15g
honey 15g
golden syrup 15g
caster sugar 82g
soda 6g

mix honey, gold syrup, caster sugar and water on the bowl, boil it until it become golden brown with the high heat. turn off the heat and then mix in the baking soda and whisk it well quickly. pour the boiling mixture on a silicone mat at once, put one more silicone mat on top to make it flat.



for the chantilly cream:
whipping cream 250g
caster sugar 15g


mix cream and caster sugar with medium speed until smooth



decorate the cake top with honey combs and it's done!
